noble sweet wines

Our sweet wines are made from carefully selected grapes from our vineyards along the Moselle. Our credo is "quality not quantity", which is why these wines are only produced in special vintages.

Sweet

Selected from the sun-drenched, steep vineyards of the Maximiner Klosterlay, our selection of overripe grapes presents itself as a masterpiece of vinification. The must, fermented cool at around 17 °C, matures for two months on the fine lees to achieve perfect harmony. The bouquet reveals a crystal-clear fruitiness that combines the essence of ripe peaches and exotic fruits. A subtle hint of honey lingers on the mineral finish, while a lively acidity provides refreshment and invigorates the senses. A wine that bears the signature of our terroir with its elegance and depth.

Riesling Auslese
Riesling Auslese
Noble sweet

The overripe golden yellow grapes from the Maximiner Klosterlay are carefully harvested by hand and macerated on the skins for six hours after the stems have been removed. The juice then undergoes a spontaneous and extremely slow cool fermentation, followed by an extended maturation period on the fine lees.

This wine reveals an abundance of tropical fruit aromas such as passion fruit, lime and peach, accompanied by a pronounced minerality. A concise acidity structure provides a balanced contrast to the wonderful fruit sweetness, and the result is a true explosion of the senses. This wine has terrific ageing potential and promises an unforgettable taste experience.

Beerenauslese

Noble sweet

The grapes are carefully harvested by hand, as only the noble rotten berries, also known as overripe berries, are selected for the production of this wine. These berries are exceptionally concentrated, resulting in an intense and complex flavor. The resulting Beerenauslese impresses with its concentrated natural sweetness, its deep golden color and its multifaceted bouquet, structure and taste.

This first-class wine can be enjoyed as an aperitif, but is also an excellent accompaniment to desserts or special occasions.

Trockenbeerenauslese
Trockenbeerenauslese
Noble sweet

This Trockenbeerenauslese is undoubtedly an extraordinary gift from nature. The hand-picked grapes were harvested extremely late, which caused them to shrivel under the intense sunlight and become like raisins. These precious berries were harvested by hand in an elaborate process and gently pressed on a small wooden press. A long fermentation process resulted in a wine of remarkable concentration, with a high natural sweetness and brilliant acidity.

This wine has a deep golden color and exudes an intense aroma of honey, raisins and exotic spices. Its taste is sweet, but perfectly balanced by its fine acidity. A real treat for all wine lovers, it is perfect as an aperitif, but also accompanies foie gras, desserts or other sweet dishes in a very special way, making it the ideal companion for festive occasions.
