The grapes for this wine are carefully harvested and selected by hand, and we wait until they are fully ripe before harvesting them. This meticulous approach gives our wine its unique character.

After an extended maceration period, the grapes are gently pressed and taken to our old cellar, where fermentation takes place spontaneously, partly in stainless steel barrels. The natural yeasts already present on the grapes and in the cellar environment contribute to this natural process by converting the sugar into alcohol.

The unique combination of the high slate content in the soil and the cool south-western exposure of the Hinkellay gives our wine a distinctive, herbal and spicy note. The result is a wine of incomparable character and quality.

Maria’s absolute favorite wine is a real pearl. The small, very ripe berries come from vines over 50 years old from the steepest slate site on the Maximiner Klosterlay. These grapes give the wine dense, deep and exotic fruit aromas with a hint of saltiness. They are harvested by hand with the utmost care and then macerated. The wine is matured spontaneously in wooden barrels using traditional methods. This wine is characterized by the wonderful interplay of highly ripe fruit, intense minerality and perfectly integrated acidity. Year after year, interesting and fascinating wines are created in this way, which fascinate with their unique characteristics.

Soil: Slate
Ageing: Wooden barrel
Drinking temperature: 10°C
